Tavë kosi — the lamb-and-yogurt dish that defines Elbasan

Ask an Albanian for the national dish and the answer comes without hesitation: tavë kosi. It is deceptively humble — lamb, yogurt, eggs, a little butter and flour — but the alchemy in the oven turns those few ingredients into something between a roast and a savoury custard, the yogurt setting into a pale, tangy blanket over meat that has gone meltingly soft.

Born in Elbasan

The dish belongs to Elbasan, the workaday city on the Shkumbin river in central Albania, less than an hour from Tirana over the mountain road. Locals call it tavë Elbasani, and every family guards its own ratio of kos (yogurt) to egg. Traditionally it was cooked in a shallow clay dish — the tavë that gives it its name — and carried to the neighbourhood bakery to bake slowly in the residual heat of the bread oven.

What's really in it

Pieces of lamb, sometimes mutton, are first browned or part-roasted, often over a scatter of rice that catches the juices. A whisper of oregano and a bay leaf are common, but the seasoning stays deliberately restrained. Then comes the crucial layer: thick yogurt whisked with eggs, a spoon of flour and melted butter, poured over and baked until it puffs, sets and turns golden at the edges. Good tavë kosi is faintly sour, rich but not heavy, and always served hot from the dish — often in the individual earthenware pot it was cooked in, and it deflates as it cools.

How to eat it like a local

You'll find it on the menu of almost any traditional restaurant countrywide, not only in Elbasan. Order it as a main, with bread and a simple tomato-and-cucumber salad to cut the richness, and a glass of red or a shot of raki alongside. It appears year-round but feels best in autumn and winter, and it is the centrepiece of Sunday tables and feast days. If you see a dish come out fresh from the oven, don't wait — that first, still-trembling spoonful is the whole point.
