Peppers, tomatoes, cottage cheese, all baked together until creamy — Tirana's simplest love letter to summer produce.
Fërgesë comes in many forms but the iconic one is fërgesë me speca dhe djathë: roasted peppers, tomato, garlic and cottage cheese baked in a clay tavë until the cheese melts into the vegetables.
Served with bread, raki on the side. The version with chunks of liver (fërgesë me mëlçi) is the carnivore upgrade.
